The Rocket Giotto Evoluzione features a rotary pump which enables the machine to operate from an internal tank, or it can be plumbed in to the mains connection. A flick of a switch can allow the machine to function from either system allowing greater flexibilty and portability. The commercial rotary pump also has the advantage of being very quiet. The Evoluzione features all the classic design features that the Giotto is famous for, plus an extra gauge on the front panel allowing the pump pressure to be observed. This pressure can easily be adjusted on the Evoluzione from underneath the machine.

Steam and Hot water handles
The steam & hot water handles have been redesigned. The new handles have a superior feel and unique centre caps to retain the elegance that Giotto has become known for.

Control panel
When the water level is running low in the reservoir a flashing power lamp light is indicated. The pump is still disabled should the water level become critical.

Newly designed feet
New and redesigned feet. 125mm of surface contact area on each foot ensures the stability of the machine. The machine now sits at height of 30mm which enhances the visual presence of the machine.

Drain tray modifications
New drain tray lines now follow the contours of the machine, adding to the elegance that is Giotto. Drain trays now slide out to eliminate water slop when being emptied.

Commercially specified pressure stat
At last a domestic espresso machine that has a pressure stat with the accuracy of 0.035 degrees. Temperature control as good as it gets, with the addition of a fully commercial pressure stat. Technology that in the past was reserved for commercial machines only.

Enhanced temperature control
The diameter of both the inlet and outlet group pipes has been increased which in turn increases water circulation and aids thermal retention within the group. The Giotto Premium Plus model now features group circulation pipes of 10mm. This version also has a fitted restrictor into the group inlet tube, which adds control and stability to the group water temperature.

New cup frame surround
The retro beauty of the famous espresso machines of the 50's and 60's has been retained with the Giotto cup frame. The new cup frame has a thickness of 5.5 mm and is now firmly secured in four fixing points.
